2 chicken thighs
5 c of water
1/2 chicken breast cubed or cut into strip
1 garlic bulb peeled and grated
1 1/2 c spinach
1 tbsp of lemon zest
1 large potato cubed
3 celery stalks diced
2 carrots diced
1/2 egg noodles *optional
1 large onion diced
Juice of half a lemon
Sea Salt & Pepper to taste
Ughh this flu is trying to get a hold of me. But I'm not having it.
Getting this Garlic Chicken soup to help me battle it.
Direction
In a medium pot boil 2 chicken thighs, 2 grated garlic cloves 1/2 c chopped onion, 1/2 of the diced carrots. Simmer for about 10 minutes then remove chicken thigh and with two forks pull the chicken meat from the bones.
Return meat to the pot and add all the remaining ingredients but reserve a tbsp of the grated garlic and half of the spinach.
Simmer for another 15 -20 minutes then add the remaining ingredients. Serve hot.
