 Whole-wheat Rotelle & Lean Turkey meatballs

Pasta night you say? Try out this yummy goodness. Simple, easy and quiet filling.


Serves 3-6

Ingredients

1 box Kirkland or Trade Joe's Organic whole grain wheat rotelle pasta
1 lb. Shady Brook lean ground turkey
2-3 garlic cloves minced
1/4 c 4C whole wheat bread crumbs or 6-8 Nabisco wheat cracker crushed (*see note)
1/8 tsp kosher salt
1/4 tsp black pepper
1/4 c fresh basil chopped
1 c white button mushroom (sliced)
2 tbsp Smart balance canola blend oil or pure olive
1/2 c of water

Sauce:

1-2 16 ounce can tomato puree (of your choice)

1 tbsp tomato paste (of your choice)
1/4 c fresh flat parsley
1/8 tsp kosher salt
Fresh cracked black pepper

 Grated Parmesan for garnish

Instructions:

Follow package instructions for the pasta.

Use a medium bowl and mix ground turkey, bread crumbs or the crushed crackers, salt, pepper and basil. Mix and shape meatballs, set aside.

In a medium pan on med/high heat add the oil. Heat oil and then add the meatballs. Cook for 3-5 minutes before turning meatball so it cook and browns evenly. use the 1/2 c of water to help you stir and turn the meatballs gently. Add tomato paste, parsley, 1/8 tsp kosher salt and cracked pepper and one of the cans of tomato puree. Stir gently, simmer for 3 minutes then add the pasta.
Mix well if you desire more sauce then add the other can. If so, a simmer for another 1-2 minutes and check for taste so you may need to increase salt, pepper and spices. Garnish with grated Parmesan.  Serve and enjoy!




*Place Nabisco wheat crackers in a zip-lock bag, seal it remove all air from bag.
  Bang with a large metal spoon to crush all the crackers.
