Lunch - loaded cauliflower





Loaded cauliflower

Fairly simple lunch when you are short on time. Soon as I dished it up and brought to the table, my family nearly left me any. These are so yummy you won't miss the potato version.

Cauliflowers are a powerful anti-oxidant and loaded with Vitamin C, B1, B3, B5, B6, K, fiber, mineral like potassium, copper, maganese, calcium and iron.  Add this yummy cruciferous vegetable to your meals. 
Replace your mashed potatoes for mashed cauliflower. Simple delish!  Look out for that recipe on here, very soon!

We prepare this vegetable varies ways here at home like: raw in salads, roasted with garlic olive oil and a bit of sea salt and black pepper or steamed. Give it a try!




Look at the gorgeous colors they come in.






All you need is :

1 small head of cauliflower - separated into smaller florets
1/2 c shredded fat free cheese (or any cheese of your choice)
4 - 5 strips of turkey bacon (or bacon of choice) crumbled *optional
cracked black pepper to taste

Instructions:

Wash cauliflower and separate into smaller pieces and transfer transfer to a colander or a steam basket and set aside. In a large saucepan boil water. When water boils bring over the cauliflower in the colander or steam basket. Turn heat off and place a lid for 5 - 6 minutes. 
then removes drain. Plate and serve. Top with the remaining ingredients. Enjoy!
