Split pea,beef and butternut pottage





Split pea, beef and butternut pottage

I still had some butternut squash left in the freezer so I may this delicious pottage with split pea. Goodness this was so good.

Here what I added:

1 c split pea
1 c tomatoes cubed
2 garlic cloves
1 mini sweet orange pepper
1/2 c green pepper
2 c stock (chicken, beef, turkey or vegetable) unsalted
2 strips of bacon (lean, low salt or turkey bacon)
1 3 oz steak cubed *optional
1 tbsp of bitter orange (Goya)
1 c potato cubed
1 c butternut squashed cubed
1 tsp cumin
1 tsp sage
1 tsp ground onion
1/4 tsp turmeric
1 tsp ground oregano
1 tsp black pepper
1 tbsp bouillon (chicken, beef, turkey or vegetable)
2 c of water

Instructions:

In a medium size sauce pan cook the bacon to crisp, then remove from pan and set aside.
Season steak with salt and pepper and bitter orange then add it to the pan with the rendered bits from the bacon you just removed. Stir constantly searing the cubed steak on all sides. Then add all the ingredients except for the bacon that you set aside. Simmer for 30 - 45 minutes, till beans have softened, steaks as well and all water has evaporated and left a pottage like consistency. Now you can add the bacon to the pot. Crumble it to pieces and stir. Plate and serve. May drizzle some hot sauce of your liking.
